How to Make Keto-Friendly Smashed Brussels Sprouts
Smashed Brussels Sprouts
Ingredients
- 2 lb. Brussels sprouts
- 2 Tbsp extra-virgin olive oil
- 2 cloves garlic (minced)
- 1 tsp freshly chopped thyme
- Kosher salt
- Freshly ground black pepper
- 1 Cup mozzarella (shredded)
- 1/4 Cup Parmesan (freshly grated)
- Freshly chopped parsley (for garnish)
Instructions
- Preheat oven to 425°
- Place parchment paper over a large baking sheet
- Bring a large pot of water, salted, to a boil.
- While waiting for the boil, prepare an ice bath for the Brussels Sprouts in a large bowl
- When water reaches the boil, add Brussels sprouts and allow them to cook until they are tender and bright green.
- This will be approximately 8 - 10 minutes
- Remove Brussels sprouts to the ice bath
- Allow to cool, then remove and drain
- Toss Brussels sprouts with garlic, thyme, and oil
- Line Brussels sprouts on lined baking sheet
- Smash each Brussels sprouts with the bottom of a small cup or mason jar
- Press down until the Brussels sprouts are flat
- Sprinkle Brussels sprouts with salt, pepper, mozzarella, and Parmesan
- Bake until crispy and golden. Approximately 20 - 25 minutes
- Use parsley as a garnish
- Serve warm
